cheesy mr potato

another full day roughing it in school. at home-the internet reign supreme and as i said, the internet is evil (see where it leads me to now?).
i rest my case.
in school, its an entirely different matter. the internet connection is as dead as a fossil.

like to share with you a frigging simple and delightfully delish recipe... which is incidentally, my packed brunch-lunch-and-anything-in-between today.

potato-cheese-melt

ingredients:
2 potatoes unpeeled (and scrubbed to death, thank you), chopped garlic, shrimps, egg, fresh mushrooms, cheddar/parmesan/mixed cheese, italian herbs, salt and black pepper to taste + some butter/olive oil

directions:
fry the potatoes and remove from stove. throw in the shrimps, stir till just cooked and remove. ditto for the mushrooms. this is to prevent them from sogging the main dish.
melt some butter and add in the garlic followed by the shrimps and mushrooms. stir till cooked. add in the potatoes, italian herbs, salt and black pepper. stir. at the last moment, sprinkle loads and loads of cheese before turning off the stove. (alternatively, you may like to hold the cheese, transfer the dish into a microwavable container, THEN sprinkle loads of cheese on top before setting it in the oven).
