nigella express: rocky road

Photobucket

i think she's a genius. the marshmallows lend a perfect, chewy texture to the recipe. this one's for the mommy in law.

i used up whatever chocolate that i could find in the fridge- which incidentally happened to be some hersheys special dark almond nuggets and leftover choc chips. they give the squares that rich, dark brown tone that you see here. and i love it that they are mildly sweet too.

the ingredients are based on an agak-ration basis.

rocky road
marie biscuits
hersheys's special dark almond choc nuggets
choc chips
butter (not much, main purpose is to 'liquify' the chocolate)
1 packet of marshmallows

1. heat the chocs and butter in a pan over a slow fire until all's melted. stir constantly.
2. remove a portion of the chocolate mix into another bowl.
3. roughly chop the biscuits (or you can do what nigella did and bash them up with a rolling pin. for an action that is somewhat violent, it looks reassuringly therapeutic.)
4. mix the biscuit and everything else into the pan. stir constantly until the marshallows incorporated into the mixture.
3. pour mixture into a baking tray.
4. pour the remaining chocolate mixture from (2) on top.
5. let cool slightly and place it in the fridge.
4. cut into squares when rock's hardened.
