nigella express: strawberry cheesecake

yet another reason why i love that hot ms lawson.
for me babes, who popped by last night.
to her credit, needlessly to say, they adored it (who wouldn't) and the remnants of the night saw this humbly simple yet absolutely gratifying recipe passed on from one hand to the other.
good things, must share.

there are several things i appreciate about her take on this cheesecake (other than the obvious-a frenzy of excitement on the tongue). one of which is of course, the unbelievably short time needed to whip it up-which in my opinion, is the only way to go, considering the even shorter time taken to gobble this down.

This came in especially handy, considering you reached home at 5, your friends were coming over at 7, your home was a mess (with spiders attempting to set up posts in hidden corners), and you realised that between the potato salad, cream penne, cleaning the house, cleaning up AND hugging the hubbs who'd just gotten back from reservist (thereby waking him up -_-), you don't have any time to jump up and punch your fist in the air (not that i do that in my free time), much less attempt to squeeze in a decent dessert for the guests.

BUT.. ms lawson (and Him) made it all possible, and for that i'm grateful.

yet another reason why i'm waxing lyrical about this recipe, is the fact that this cheesecake is not anywhere near cloyingly sweet. it is rich but surprisingly delicate too-without that lingering sweetness that clings on to you like an irritating toffee stuck between the gums.

but above all these, i feel the real reason that makes this recipe a clear winner, is the addition of that squirt of fresh lemon juice, which i apply liberally on the cheesecake-more than the specified amount of 1/2 tsp... (but please do a little taste check and try not to be overzealous).

i love fresh lemon juice -i think it works wonders in almost everything... cept' maybe in the eyes...

personally i prefer the non-baked variety as it's denser, richer, simpler, quicker- in other words, in every sense- better.
absolutely delish.

the original recipe called for cherry conserve. other than swopping that for strawberry, liberally squirting more than just 1/2 tsp of lemon juice which the recipe called for, and reducing the sugar, the other ingredients remain unchanged.

PS: i had tried other recipes for non-bake cheesecake, but none taste as good as this. That should be reason enough for you to go whip this up.NOW.
strawberry cheesecake (adapted from nigella express):

ingredients

1. 125g digestive biscuits (for the uninitiated-mcvities)
2. 75g butter (at room temperature)
3. 300g cream cheese (bought at phoon huat in jurong)
4. a liberal squirt of lemon juice
5. 50g sugar
6. 1 teaspoon vanilla extract
7. 250ml bulla pure cream
8. 1 x 284g jar St Dalfour Rhapsodie de Fruit Strawberry Spread (or any conserve with high fruit content)

directions:
blend (1) into crumbs.
mix in with (2) and press onto a baking pan.
using a blender, whip (3), (4), (5) and (6) until soft and creamy.
using a fork, whip (7) until the consistency just about start to change. then please stop, lest you'll enter the point of no return.
fold this into the blended cream cheese mixture.
spoon on top of the digestive biscuits base and refrigerate for at least 3 hours.
spoon the conserve onto the cheesecake before wolfing it all down.
